Spier Signature Merlot is a regal red appearing wine made from ripe red and black berries, plums and an undertow of eucalyptus and mint. This Merlot has sappy fruit, mint, and soft tannins. It is a perfect pairing companion for lamb casserole or a vegetarian dish.

The merlot grapes are usually harvested at 24 degrees balling. After harvesting, the grapes are gently crushed, de-stemmed and cooled in the cellar. After two days of cold soaking, the juice is fermented until dry in stainless steel tanks at 24 degrees. Three pump-overs are conducted daily. After fermentation, 20% of the wine is matured in French oak barrels for 8-10 months and the remainder matured in stainless steel tanks with French oak staves.
